Working at the counter involves exposure to heat, steam, and food aromas. The space is limited, and employees usually stand for long durations. Responsibilities require preparing hot and cold dishes, operating kitchen tools—including Chinese cook knives—rapidly but accurately. Ability to lift up to 50 pounds, stand for up to four hours, and reach across 36-inch countertops is expected. The kitchen environment is hot and noisy, with limited storage. Successful employees demonstrate adaptability to a fast-paced setting, strong verbal communication skills, and competence managing conflicts and shifting priorities.
