About the Role
Positioned at the Anantara Kalutara Resort in Sri Lanka, part of the globally renowned Anantara Hotels & Resorts, the Hygiene Officer plays a vital role in upholding exceptional standards of hygiene, sanitation, and food safety within the hotel. The role is focused on ensuring alignment with HACCP frameworks, local regulations, international food safety norms, and internal policies, delivering a secure and clean environment for both guests and employees.
Key Responsibilities
- Perform routine inspections on hygiene and sanitation across kitchens, dining areas, staff zones, storage facilities, and additional operational locations.
- Supervise food handling, preparation, storage methods, temperature monitoring, and personal hygiene adherence amongst staff.
- Guarantee adherence to HACCP protocols, relevant food safety regulations, and hotel hygiene policies.
- Detect potential hygiene hazards and suggest suitable corrective and preventative measures.
- Keep detailed records such as hygiene inspection reports, checklists, and temperature logs.
- Audit and track the efficiency of cleaning and sanitation procedures and address any deficiencies discovered.
- Oversee pest control operations in coordination with departments and external service providers.
- Facilitate hygiene and food safety training sessions for culinary, food & beverage, housekeeping, and other pertinent staff groups.
- Inspect all food storage areas regularly to confirm proper inventory rotation, labeling, cleanliness, and safe storage compliance.
- Assist in investigating all food safety issues, guest complaints, or concerns related to hygiene.
- Coordinate corrective actions with relevant departments ensuring timely resolution.
- Stay informed on current food safety laws, industry standards, and best practices.
- Support both internal and external hygiene audits to keep the hotel prepared for regulatory assessments.
- Encourage a pervasive culture focusing on food safety, cleanliness, personal hygiene, and ongoing enhancements throughout the property.
