Food & Beverage Controller

Position Overview

We are seeking a qualified Food and Beverage Controller to join our team at Montclair Resort and Conference, located in Nyanga, Western Cape, South Africa. This permanent role reports directly to the Assistant Accountant and involves key financial and operational responsibilities within the food and beverage department.

Main Responsibilities

• Perform in-depth Cost of Sales analysis and maintain accurate standard recipe costing for all menu offerings.
• Collaborate with the Head Chef to assess menu performance and enhance profitability through menu engineering strategies.
• Manage monthly stock-taking activities, ensure secure storage of all stockrooms and cellars, and handle slow-moving inventory efficiently.
• Oversee procurement by validating supplier prices and approving purchase orders that comply with budgetary limits and quality standards.
• Audit operational processes by monitoring POS transactions for improper voids or discounts and conducting spot checks and yield tests as necessary.
• Prepare detailed monthly financial reports relating to food and beverage stocks, variances, and forecast analyses for senior management review.

Candidate Profile

• Possess a degree in Accounting, Finance, or Hospitality Management.
• Have 2 to 3 years of relevant experience in the tourism and hospitality sector, preferably in a busy urban property or FMCG environment.
• Proficient in OPERA, SAGE 300, Inventory Management Systems, and Microsoft Excel.
• Demonstrate strong analytical and investigative capabilities.
• Exhibit assertiveness and high ethical standards.
• Possess excellent communication skills for effective interdepartmental collaboration.
