Job Overview
The Executive Pastry Chef leads the pastry and bakery operations, ensuring all procedures adhere strictly to Shangri-La’s standards and policies. This role involves assisting the Executive Chef, managing pastry creation, and maintaining high sanitary and operational standards.
Key Responsibilities
- Support the Executive Chef in overseeing all pastry-related operations and maintaining compliance with Food & Beverage policies and hygiene regulations.
- Design and implement creative menus for the pastry department, including seasonal and event-driven offerings.
- Uphold purchasing, receiving, and food storage procedures according to established standards.
- Ensure equitable administration of departmental policies.
- Conduct daily inspections of the pastry kitchen to guarantee compliance with health regulations and hotel standards.
- Engage in marketing activities such as cooking demonstrations, media events, and guest interactions.
- Collaborate with culinary teams to introduce innovative techniques and trends into menus.
- Manage day-to-day operations, including staff scheduling, inventory oversight, and budgetary controls.
Qualifications and Skills
- A minimum of five years’ experience in a similar pastry chef leadership role.
- Demonstrated success in crafting visually appealing and inventive pastries and confections.
- Comprehensive expertise in pastry and bakery methods, ingredients, and equipment.
- Proven ability to create distinctive pastries for multiple hotel venues such as restaurants, banquets, and room service.
- Strong leadership qualities with the ability to mentor and motivate a diverse team.
- Effective organizational and time management capabilities, with skill in handling high-pressure situations and meeting strict deadlines.
