Overview
Situated at Mandarin Oriental in Doha's Culinary Department, the Demi Chef de Partie plays an essential role in assisting the Chef de Partie with managing a specific kitchen station, ensuring consistency in food production and service quality. This role entails supporting various food outlets including buffet, à la carte, banquets, and special events by preparing hot and cold dishes, sauces, garnishes, and event items aligned with specified recipes, quality benchmarks, and food safety regulations.
Key Duties
- Assist in organizing daily food preparation and service operations within the kitchen.
- Oversee preparation and presentation of various culinary items as per established standards.
- Ensure timely setup of mise en place to ready the kitchen section for service periods.
- Mentor Commis chefs and trainees on food preparation techniques and hygiene practices.
- Monitor ingredient quality, freshness, portioning, and proper storage in the assigned section.
- Maintain high hygiene standards, proper care of equipment, and adhere strictly to HACCP procedures during shifts.
- Contribute to operations across multiple outlets and events ensuring consistent quality and efficiency.
- Assist with inventory management including stock rotation, requisitioning, and reporting shortages to senior kitchen staff.
- Engage in team development activities such as training sessions, tastings, and briefings.
- Exemplify professionalism, teamwork, grooming, and uphold the Mandarin Oriental standards.
Qualifications and Experience
- Completion of High School or equivalent credential mandatory.
- Culinary diploma or recognized professional culinary certification is preferred.
- At least 2 years of culinary experience in hotels or reputable restaurants.
Skills and Competencies
- Comprehensive understanding of kitchen operations including mise en place, cooking techniques, and service flow.
- Technical expertise relevant to the designated kitchen section, ensuring high-quality preparation and plating.
- Capability to lead and instruct junior chefs and trainees efficiently during preparation and service.
- Sound knowledge of food safety protocols, HACCP standards, labeling, and sanitation practices.
- Ability to maintain section readiness and uphold quality, especially under pressure situations.
- Strong organizational abilities focusing on portion control, waste minimization, and timing accuracy.
- Professional communication skills for interacting with senior chefs and team members.
- Willingness to participate actively in training, operational briefings, and continuous improvements.
- Flexibility to work diverse shifts and support multiple kitchen areas or events as required.
