About the Role
Based at Mandarin Oriental in Doha within the Culinary Department, this Culinary Trainee position involves learning basic kitchen tasks under close supervision. The role supports various kitchen sections, including outlets, buffets, à la carte service, banquets, and special events, ensuring that food items such as hot and cold dishes, sauces, garnishes, and buffet items are prepared according to recipes, quality standards, and food safety guidelines. The trainee will work with senior chefs to develop foundational culinary skills, maintain professional conduct, and understand hotel kitchen operations. High standards of hygiene, organization, teamwork, and flexibility are expected to meet operational demands.
Key Responsibilities
- Assist with the preparation of hot and cold food items, sauces, garnishes, buffet offerings, à la carte dishes, and event setups under close supervision.
- Support daily mise en place tasks by washing, peeling, portioning, organizing, and prepping ingredients as directed.
- Learn proper handling of kitchen tools, equipment, ingredients, and basic cooking techniques.
- Keep assigned work areas clean and well-organized in line with hygiene standards.
- Adhere strictly to food safety protocols, personal hygiene, and grooming requirements.
- Help with receiving, labeling, storing, and rotating kitchen ingredients as supervised.
- Provide support to different kitchen outlets, buffets, banquet setups, and special events as required by business needs.
- Participate in briefings, training, and practical learning sessions to increase culinary knowledge and skills.
- Communicate courteously with team members and follow supervisor instructions attentively.
- Exhibit punctuality, a positive mindset, and eagerness to learn the Mandarin Oriental culinary standards.
Candidate Profile and Requirements
- Applicants passionate about hospitality and culinary arts, eager to grow their skills within a luxury hotel environment.
- Previous experience in culinary or hospitality sectors is beneficial but not mandatory.
- High School education or equivalent is preferred.
- Possession of a basic food hygiene certification is advantageous.
- Genuine interest in culinary operations and enthusiasm for learning professional kitchen standards.
- Ability to follow detailed instructions and complete tasks under supervision.
- Knowledge of fundamental hygiene, grooming, and food safety practices.
- Positive attitude, reliability, and willingness to support the kitchen team during busy periods.
- Capability to work efficiently in a fast-paced environment while gaining confidence and technical expertise.
- Good English communication skills; proficiency in additional languages is a plus.
- Physically fit to stand for prolonged periods and assist with essential kitchen duties.
- Ready to work flexible shifts, including weekends and public holidays as necessary.
